SYDNEY SEAFOOD SCHOOL TO THE RESCUEIf summer showed up some holes in your cooking techniques, especially where seafood is concerned, take yourself off to learn from experts in the coming months. The Sydney Seafood School’s new program of classes (March-June) has just been released with an exciting line-up of guest chefs. March sees David Thompson back in Sydney to work on his new book (due for release 2008) and to conduct two cooking classes at the School (3 and 10 March). Other guest chefs in March include Perry Hill (from Boathouse on Blackwattle Bay which has just celebrated its 10th birthday), Darren Simpson (La Sala), Guillaume Brahimi (Guillaume at Bennelong) and Matthew Moran (Aria). And Kathy Snowball takes the trouble out of Easter Entertaining with a deliciously simple 3-course dinner party menu on 15 March. April brings more guest chefs: David Thompson protégé Max Mullins from Oceanic Thai; Mark Jensen cooking dishes from the menu of Vietnamese favourite Red Lantern; Christine Manfield producing exciting dishes with her own wonderful blend of flavours and textures; and another chance to see the talented team of Janni Kyritsis (with delicious dishes from his recent cookbook Wild Weed Pie) and his ex-sous chef Lauren Murdoch (now Head Chef of Lotus). May means Mothers Day and a Sydney Seafood School Gift Certificate is the perfect gift (you can even print one on the spot from the website if you’re running late). Meanwhile, with their Entertaining class on 2 May, the Australian Gourmet Traveller team has a few ideas on what to cook when the family gather to honour mum. Martin Place restaurant, Banc, under Liam Tomlin, seems to have been a breeding ground for bright young chefs, such as Justin North at Bécasse (18 June). Warren Turnbull, another Ex-Banc boy who opened Assiette on the old Bécasse site in 2005 when North moved into the city, presents his inaugural Seafood School class on 7 May. We can’t get enough of all things Spanish at the moment, and on 29 May the ‘Queen of Fast and Fabulous’, Lyndey Milan, conducts a wine workshop matching Spanish dishes with a range of Spanish varietals. On 4 June Aaron Ross from The Wharf Restaurant at Walsh Bay returns to the School and on 6 June Ajoy Joshi from Nilgiri’s presents another of his classes exploring the diverse cuisines of India. Of course the program’s also full of all the regular favourites: Seafood BBQ, Sushi & Sashimi with Hideo Dekura, Salt & Pepper Prawns, Chilli Crab, Tapas and Paella.
