- After an initial discussion with Sally (see background) a respected and highly experienced food writer and restaurant reviewer, you will contract for an assessment to be carried out anonymously. The total cost to the restaurateur is the modest fee for the assessment and the reviewers’ meals.

- The reviewer and a dining partner will then book and dine at your restaurant in the same way as any other customer.
- At the end of the meal they will identify themselves and, as agreed in the contract, you then waive the cost of the meal (you will have agreed to a maximum order of three courses and a glass of wine each).
- Within a week you will receive your written assessment which covers every aspect of the dining experience from the efficiency of the phone booking through to the farewell at the end of the meal. It will focus not just on negatives but on positive aspects of the experience as well.
